Beef with Green Beans or Asparagus
This is an elegant winter meal that comes together surprisingly quickly.
Ingredients
- 2 Tbsp. cider vinegar
- 3 Tbsp. reduced sodium soy sauce
- 1 Tbsp. brown sugar Splenda
- 1/4 tsp. crushed red pepper
- 8 oz. boneless beef sirloin (trimmed and sliced thinly across the grain into bite sized strips)
- 3 Tbsp. vegetable oil
- 2 garlic cloves, minced
- 1 lb. fresh green beans OR asparagus
- 1/2 lb. mushrooms (optional)
- 2 cups red onion, sliced
Instructions
- 1. In bowl, combine vinegar, soy sauce, Splenda, and crushed red pepper
- 2. Heat two tablespoons oil in a large skillet over medium high heat.
- 3. Add garlic, cook and stir 30 seconds. Add beef and cook two minutes. Remove from heat and keep warm.
- 4. Add remaining tablespoon oil over medium heat, add half the beans or asparagus, cook stirring about 3 minutes, add remaining beans or asparagus, mushrooms (optional) and onions, cook about 4 minutes until beans are blistered and onions are tender.
- 5. Return beef to skillet with accumulated juices.
