Chicken Egg Drop Soup
This flavorful egg drop soup is rich and wonderfully satisfying. Don't worry about getting the eggs just right - the soup is delicious even when imperfect!
Ingredients
- 3 1/2 cups chicken broth (fat free, low sodium)
- 1 1/2 tp. soy sauce
- 2 Tbsp. corn starch
- 1/2 tsp. pepper
- 1 Tbsp. water
- 1 Large egg
- 1 Large egg white
- 2 cups chicken (cooked and chopped)
- 1/4 cup green onion
- 1 Tbsp dark sesame oil
- 1/4 cup basil (fresh, shredded)
Instructions
- 1. Combine broth & soy sauce in a saucepan.
- 2. Bring to boil over high heat.
- 3. Combine corn starch, pepper & water in small bowl, whisk until smooth.
- 4. Slowly whisk corn starch mixture into boiling broth.
- 5. Reduce heath and simmer until slightly thickened, stirring frequently.
- 6. Combine egg and egg white, whisk until blended.
- 7. Slowly add to broth mixture, stirring gently.
- 8. Add chicken, green onions, and sesame oil.
- 9. Heat thoroughly. Ladle into bowls, garnish with basil.
