Spaghetti Squash with Garlic and Oil
Try this delicious low-carb, gluten-free, simple dish with garlic, olive oil and red pepper flakes.
Ingredients
- 2 Tbsp. olive oil
- 4 cloves garlic, thinly sliced
- 1/2 tsp. crushed red pepper
- 4 cups cooked spaghetti squash
- 1 tsp. kosher salt
- 1 Tbsp. fresh flat leaf parsley, chopped
- 1/4 cup grated parmesan cheese
Instructions
- Cooking Spaghetti Squash
- 1. Poke holes all over squash.
- 2. Microwave on high for 6 minutes.
- 3. Turn squash over and cook approximately 8 more minutes.
- 4. Let cool for 5-10 minutes.
- 5. Cut in half, remove seeds and shred
- Make Sauce
- 1. Heat large skillet over medium heat, add oil and garlic.
- 2. Cook, stirring until garlic softens and turns golden brown.
- 3. Add pepper flakes and cook 30 more seconds.
- 4. Add cooked squash. Season with salt and toss.
- 5. Transfer to bowl and sprinkle with cheese and parsley.
