Whipped Cauliflower Puree
This cauliflower puree is creamy and comforting, and it just happens to taste a lot like mashed potatoes. It also has the benefit of being easier to make, healthier and lower in carbs.
Ingredients
- 1 large head of cauliflower
- 2 garlic cloves, smashed
- 4 lunches firm lite silken tofu
- 1 Tbsp. butter
- 1/4 cup chick or vegetable broth (more if too thick)
- 2 Tbsp. Half & Half or Fat Free Sour Cream
- Salt & Pepper to taste
Instructions
- 1. Core the cauliflower and cut into florets
- 2. Boil or stream with garlic until very tender, about 15 minutes
- 3. Drain well and set aside.
- 4. Place the tofu into food processor and process until creamy, about 30 seconds.
- 5. Add the cauliflower, garlic, butter, broth, and half and half. Process until creamy, about 1 minute.
- 6. Add more broth if too thick.
- 7. Season with salt & pepper.
